Chicken Piccata with Spaghetti

Serves 4 | Active time: 20 minutes | Total time: 40 minutes

A trattoria favorite, piccata is a dish of thin veal or chicken cutlets browned in butter before being sautéed in a lemon-and-caper sauce. In this riff on the classic, I add spaghetti (it cooks perfectly in the same time as the chicken) and spinach or chard to sneak some veggies into this otherwise decadent dish. You’ll need very small (6-ounce) chicken breasts for this recipe; if you have large (10- to 12-ounce) breast halves, split them in half horizontally.

3 tablespoons all-purpose flour

Salt and pepper

4 small (6-ounce) boneless, skinless chicken breast halves (see Headnote)

2 tablespoons olive oil

1½ tablespoons unsalted butter

1 large shallot, thinly sliced

3 tablespoons drained capers

5 medium garlic cloves, thinly sliced

¼ cup dry vermouth or dry white wine

2¾ cups Homemade Chicken Broth (see recipe) or low-sodium store-bought broth

8 ounces dry (uncooked) spaghetti, broken in half

2 cups loosely packed baby spinach or chopped chard leaves

1½ teaspoons finely grated lemon zest

2 tablespoons fresh lemon juice
